Red Bean Chili

     

What's for dinner?

   

Red Bean Chili
This is VERY similar to the GOYA recipe found on the back of their small red beans can.  A great basic chili recipe with room for personal modifications!





Ingredients:
1/2 lb. ground beef (ground turkey or chicken works fine too)
1 small onion, chopped
1 green bell pepper chopped
2 cloves of garlic, minced
1 tbsp of olive oil
2-3 tbsp of tomato paste (depending on desired thickness)
1 tsp of chili powder
1 tsp cayenne red pepper
1 tsp cumin
1 tbsp fresh cilantro or 1 tsp of dried
1 15.5 oz can of small red beans (do not drain)
1 16 oz can of whole peeled tomatoes

Directions:

1. Combine  onion, pepper, and garlic in a large pot with oil and saute lightly over medium heat until garlic is fragrant (about 2-3 minutes).
2. Add meat and cook until it is brown.
3. Stir in remaining ingredients, reduce heat and simmer uncovered for 20-25 minutes.  
4. Serve over rice or nachos with your favorite toppings (Holy Guacamole, sour cream, shredded cheese, etc.)
